3 lb strawberries
4 lb granulated sugar
1 bottle Certo (pepsin)
Roughly crush the berries place in a large bowl and add sugar.
Stir in the sugar and leave to dissolve - approximately half an hour.
Add Certo and stir thoroughly. Cover bowl with tea towel and leave for 24 hours at room temperature. Stir again, place in small containers and freeze.
Use from the fridge. Keeps well.
